SPELT & BEAN STEW
SERVES: 2
PREPARATION: 5 minutes
COOK: 40 minutes
Heat oil in a large saucepan over medium heat and cook soffritto and tomatoes for 3 minutes. Add spelt and cook for another 3 minutes, stirring constantly. Add stock, bring to the boil, then simmer for 30 minutes, or until spelt is tender. Stir spinach and beans into soup and cook for another 5 minutes until spinach wilts. Drizzle with oil. Store rest of stew in fridge for another day.
